"A Lactation Cookie a day will keep the milk flowing I say"
These are super yummy and really do boost lactation in lactating mommies! I love to bring them to my new Doula Client mommies when they are home and settled and feeling the need for some chocolatey healthy comfort! ;) You can of course add raisins, cranberries whatever you want to taste! I do them a la vegan for myself and mothers I make them for. But it is super simple to substitute what you already have at home! These are not going to make your lactation crazy and cause oversupply they are pretty tame if you don't just sit and eat all 2 dozen ;) But it will help, a cookie a day will keep you lactating I say! ;) Also a good thing to make a new mommy for when they get home if you are not wanting to do food because you want to be a tad original! :) Whatever the case I hope you love them and enjoy!
- 1 Cup coconut sugar
- 1 Cup brown sugar
- 1 Cup butter very softened I use vegan but use what you got of course!
- 4 tbs water
- 2 eggs or egg re placer for 2 eggs
- 2 tsp vanilla
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 Cup brown rice flour
- 1 Cup potato flour
- 3 Cup rolled oats
- 4 Tbs flax-seeds
- 2 Tbs brewer's yeast
- 1 Cup chocolate chips
- 1 Cup chopped pecans
- Preheat oven to 375 degrees
- Cream sugars and butter
- Then add eggs/egg re-placer, vanilla, and beat well
- Add remaining ingredients, mix well
- Form into 2" balls then flatten each ball onto a parchment lined cookie sheet
- Bake 9-11 min or until edges are browned
- Cool on cookie sheet
